A marsh plant. It is a herb with stout branched underground stems which have an aroma. It continues growing from year to year. It grows to 1 m high and 0.5 m across. The underground stems can be 2 m long and 0.5-1.5 cm wide. The leaves are flat, smooth and 25 to 60 cm long and 1 to 1.5 cm wide. They are sword shaped but flexible. The leaves also have a strong smell. The veins in the leaf run along the leaf. The mid vein is off centre. The bract around the flower is green, long and similar to the leaves. The spike for the flowers is 3 to 5 cm long and 1 cm across and has many flowers. The flower is like a club. Flowers of both sexes occur. The fruit is a greenish berry. It rarely flowers in the tropics.
Sweetly aromatic; lvs crowded at the base, erect, to 2 m, 8–25 mm wide; scape resembling the lvs, prolonged into an erect green spathe 2–6 dm; spadix 5–10 cm, 1 cm thick at anthesis, 2 cm at maturity, covered with yellowish-brown fls; fr 4–5 × 2 mm; 2n=18, 24, 36, 48. Swamps and shallow water; irregularly circumboreal, in Amer. from N.S. and Que. to Minn., Alta., and e. Wash., s. to Fla., Tex., and Colo. Spring and early summer. (A. americanus)
Perennial herb, up to 2 m high. Leaves distichous; blade linear to sword-shaped, 0.8-2.0 m long, ± 10 mm wide, margins undulate. Flowers: densely congested on a lateral spadix, up to 90 mm long; spathe leaf-shaped, green like spadix; perianth 3-4 mm long, yellowish green; Feb., Mar.
Perennial herb. Strongly pungent aromatic oils present in all parts of plant. Leaves sword-shaped, 0.8-2.0 m long. Spathe leaf-shaped and green like spadix. Spadix appears lateral, green.

Environment

Its natural range is the warm temperate regions of Iran and India. They are found throughout the Philippines both cultivated and wild, growing in swamps. In Papua New Guinea it grows from sea level to 2600 m altitude. It can tolerate frost but cannot tolerate drought. It normally occurs in ditches, swamps, and on the edges of lakes and streams. It grows in wetland. It grows best in water no deeper than 22 cm. Often the plant grows in dense pure stands. It is mostly in places with a temperature below 20°C. It suits hardiness zones 3-10.

Usage

The underground stems are ground and used to flavour food. They can be eaten raw. They have a gingery peppery taste. It should probably only be eaten sparingly with caution. They contain a bitter glucoside called acorin. The forms of Acorus in Asia contain a chemical called asarone which causes cancer. The centre of the above ground section can be eaten. The underground stem can be washed, peeled, chopped into 1 cm long pieces and cooked for 20 minutes with several changes of water then simmered for 20 minutes in sugar syrup to produce candy.
